Job Description

  • Responsible for managing the full administration and operation of the food and beverage businesses to maximize profits, quality assurance, hygiene of staff, maintain high staff performance, and ensures customers satisfaction.
• Manages reservation and loyalty program rewards and points system.
• Maintain quality standard of service by consistency ensuring restaurants and bars meet minimum standards of excellence, daily communication with Executive Chef to ensure food prepared are of the agreed standards and on time, and beverages are of quality taste and proper serving.
• General hygiene and sanitation for staff who are strictly implemented including cleanliness of all restaurants and bars, personal hygiene standard for all food handlers including kitchen and stewarding sections.
• Manages existing relationships and new corporate customers to ensure revenue growth by prospecting, negotiating and closing business to achieve and exceed revenue goals. This includes external engagements with NGOs, government entitles, private corporations, etc.
• Review and analyze reports on sales results and monthly profit and loss statements and timely submit to management as needed. Participate in meetings assigned per schedule.
• Prepare and summarize all relevant data from current and previous years for F&B annual budgeting staff cost, operational costs, promotions, etc. for approval submission.
• Maintain and manage adequate controls on cost over purchase orders and requisitions, manages F&B inventory turnover.
• Plan for future business strategy and review ongoing action plans progress; establish annual promotion and menu plan with Head Chef/Executive Chef.
• Plan and manage festive season calendar, establish annual entertainment concepts, review outlet operation concepts.
• Obtain maximum publicity by facilitating all marketing activities of the company to maintain a high profile for F&B department.
• Liaise and attend promotional activities directed towards the press to introduce new menu and restaurants.
• Constantly guides and develops junior colleagues and prepare them for future growth within the company.
• Defines the role and responsibilities of each staff in the department to set clear expectations for staff, minimizing conflict and confusion.
• Manages day-to-day operation of F&B department and its personnel team on leaves, work scheduling, overtime, performance management, staff gathering, team building, succession planning, and training and development.
• Resolves and takes immediate action with arising issues and conflicts with staff or customers. Escalate issues to management immediately in the event the matter is not resolved.
• Other tasks as assigned by management.

Job Requirements

  • Minimum 8 years’ experience in business administration with sales/hospitality experience
• Proven tracking records of over 5 years in operation management experience within the hospitality, restaurant and/or consumer products industry, with at least 3 years in management position.
• Great practitioner of teamwork with strong interpersonal skills, proactive and process lateral thinking
• Strong motivator, and leads people by example demonstrating self-confidence, energy and enthusiasm
